2 carrots sliced 2 celery stalks sliced 2 potatoes diced 1 green pepper chopped 1/2 red onion finely chopped 2 cups of can diced tomatoes (Italian) 2 cups of chicken broth or vegetable broth salt and pepper 2 tablespoons of vegetable oil 1 cup water 1/2 teaspoon of thyme Heat oil on low for 2 minutes. Cook chopped vegetables on medium for 8 min. Add warmed stock & water. Add salt and pepper. Bring to boil for 1 min. Let simmer for 10 min. Add diced tomatoes and thyme. Mix well and simmer for 10 min. DONE! |
